Tofu “Egg Salad” Sandwich

Ingredients:

1 square (out of 4 in a pack of 700g) of medium-firm tofu, crumbled

Flavours and spices:

¼ tsp turmeric powder

¼ tsp black pepper

1/8 tsp salt

1/8 tsp red chilli powder (optional)

1 Tbsp chopped onions

1 Tbsp chopped tomato (seeds/insides removed)

1 Tbsp chopped cucumber

1 Tbsp chopped fresh herbs (option to use parsley, coriander or cilantro)

1 Tbsp of chopped spinach

1 tbsp of oil, butter or mayonnaise


Instructions:

1.     In a bowl crumble the tofu with a spoon or by hand.

2.     Drain extra water

3.     Mix in spices and chopped vegetables of choice.


Notes:

• This recipe will provide 2 servings of protein

• Depending on consistency you can choose to add a tbsp of oil or mayonnaise to the mixture or use some butter to add to your bread before assembling your sandwich.
